  Noble Springs Dairy, Franklin, TN
Tim is surprising us with his favorites from Noble Springs.
This creamery will be a new addition to Cheeses & Mary if it passes your taste test, so please whey in!

SHEEP
  Old Chatham Sheepherding Creamery, NY 
Naked Pruner -Naked Pruner is a soft ripened sheep’s milk cheese.   The cheese is allowed to ripen in the cave for a few days then washed in a stout
Bismark - Bismark is a cheddar/Pyrenees-style hybrid. It is savory, sweet, and yogurty, finishing with notes of candied hazelnut.  While the cheese is made at Grafton Village Cheese in Vermont, the milk is sourced from nearby Amish farmers in New York State and aged in Brooklyn.

Sequatchie Cove Creamery, TN
Coppinger - Winner of the 2017 Good Food Award, 
Coppinger is a semi-soft washed rind cheese with a striking layer of decorative vegetable ash in its center. 
Shakerag - 2015 Good Food Awards Winner, 2016 3rd place, ACS
A Cheeses & Mary Favorite, Shakerag is a crumbly yet dense blue-veined cheese cloaked in fig leaves  soaked in Chattanooga Whisky. 
Experience - A  joint effort by Consider Bardwell and Crown Finish Caves, Experience is a small format Taleggio-style cow's milk cheese washed in Channing Daughters Vermouth -
a self described stinker!
